CANNING DAY!

Seasons are changing!

Our morning is starting out great! It's a nice and beautiful day. The weather is gonna be nice. We got up early and started getting things lined out on canning. We have two roaster pans full of this yummy, good for you broth. And it took two days to make.

Pan 1: We got it strained and almost in all the jars. The plan was to get the first 10 in the canner and then keep it going. This was the plan.

We got the pot going on the burner outside. The water was ready. I brought the first batch out to the canner and grabbed the lid. I noticed the piece for the pressure valve is missing. This is a important part of making this whole thing work. Other words won't work with out it.
**(See all those leaves?)**

You might be asking where did we loose it? In the pile of lots of leaves. I never knew that the thing unscrewed and we could lose it. We quickly found out its not a magnetic piece. So our magnetic stick didn't help. We carefully looked and moved leaves. We didn't find it and we needed to make a decision. Being the only canner we have not many options and nobody else cans.
Left us with............. we bought a new one.

We got the first batch all in the jars and in the oven to keep warm.

SEVERAL HOURS LATER ...................................
This is the second batch being strained off.

We got the NEW canner filled with water and waited for it to get hot enough to add the first set of jars in it.

Ya'll notice it's dark. It is!
This makes for a long day of canning.

Second batch was going in when Tim got home.

Why is there two pressure canners going you ask?
Because Tim found the missing piece in the leaves in the dark with a flash light.

This may not take to midnight after all.

The missing piece that we didn't know screws in. In the future we will be careful not to loose again.

We got the canning done at 8pm.
42 pints
