PULLING CARROTS & CANNING!!

I remember when the girls planted the carrots. 
We waited and waited to see signs of life. Some little sprout to pop up through the ground. Finally the day came and tons of weeds came with it. We had to wait for the plants to get bigger before we knew what was what. I didn't want our hard work plucked out in a second because we thought it was a weed. 

And now we are pulling them from our ground.
The hard work has finally paid off.

We already knew the carrots were gonna be good.
Every time someone was weeding or just in the garden we were yanking a small little one to nibble on.
These carrots are sweet goodness!

Actually it was two of these bucket fulls.

I had bought several different size baskets that have holes in the bottom too. Comes in handy to rinse things off.

At some point I want to get a washing station put in.
But for now I used a old homemade trellis and it worked well for the basket to sit in. I also grabbed some saw horses from the garage. 


The time consuming part was cutting the stem from the carrot.


All the carrots are clean and ready to go to the house.

All we have now is the onions that were planted on the outside edge of the carrots. When we pull them out we will cover this bed to be ready for the next planting. So far it's been a hot summer.

We peeled and peeled and peeled and peeled and you get the point.
We were tired but we got them all peeled. That was a lot of carrots.
We bagged some for a dinner, bagged some to eat and put the rest in a bowl until the next day.

We got started the next morning slicing some up and leaving some whole.

Kaitlin is adding the salt to the jars.

Next we added the super hot water to jars with carrots.

Carefully we added jars into the canner.
In and out and processed three batches.


Got that done. Next year I think we will plant another row.
Now to make room in the pantry for them.
