Chicken Enchiladas and Pancakes

Last night we had homemade chicken enchiladas for dinner! Yum! Lauren also spent the night and Jake and Ashley came over and ate dinner with us. And afterwards, we all played spoons the card game.

Yesterday we had a B.R.I.G.H.T. Lights (for more info you can ask in the comments) meeting so mom made some banana muffins!

Last night's dinner

There is a restaurant called Chipotle and they have GIANT burritos. So my dad asked if my mom would make these huge burritos! (they were really good!!)

Last Nights Muffins To Today's Lunch

Last night my mom and Kaitlin made muffins.....Chocolate-Chocolate Chip Muffins, to be exact!
Three girls living in the house we got hungry for chocolate!

                       Chocolate-Chocolate Chip Muffins

  Makes 12 muffins.

1 1/2--2 cups all purpose flour (we used about 2 1/4 cups, because we mill our own flour)

1 cup sugar

1/2 cup unsweetened cocoa powder

2 teaspoons baking powder

1/4 teaspoon baking powder 

1/4 teaspoon salt

2 large eggs 

1 cup milk

2 sticks of butter melted

1/2 cup chocolate chips (we used mini)

Bake at 375F  for 18-20 minutes

ENJOY!!

 All of our ingredients! (you actually don't need oil, we got that out and took the picture and then realized the recipe didn't call for it!)
So moving on to the actual making of the muffins!

Birthday Celebration!

Saturday, February 21st was my brothers 26th birthday!
So on Sunday we went and had lunch and the family all joined him for this celebration.
His fiance, Ashley made cupcakes, (they were good!) and we had a good time talking and enjoying one anothers company.

Afterwards Brieanna and Isabella Grace came back home with us. Later Jake and Ashley came over so mom could help with the wedding program. We played cards, chess and just hung out.

Canning Chicken Broth And Slicing Meat

Today we canned chicken broth. Mom started it Thursday morning and we canned it today.

Slicing meats

Mom and dad went to the store today and while grocery shopping, bought a whole slicing turkey and honey ham. They had to buy a plain turkey, as the others had mesquite and hickory flavor. (Kaitlin is allergic to mesquite and I am allergic to hickory.) Slicing some to eat and slicing some to freeze.
